I'd be afraid, shorty, if you had too much sole and landed on unstable ground - would that cause you to lose footing - like walking in platform shoes?
How heavy is that bike, really? Can you practice in your yard with your hubby on one side or the other and on purpose let it lean to one side or the other. The main thing is to have your landing foot (one leg stand) wide enough to give you leverage against the CoG of the scooter. Once you see that letting it tip a couple inches on either side instead of always standing perfectly upright - it may give you confidence to not worry about stops on two feet.
Not sure if your scooter is an open front (where you can place your feet side by side) or one that looks more like a motorcycle ... if it is open - is your seat too long in the front, kinda stopping you from getting your feet down? I'm remembering the difference between the old English racer bikes and the banana seat trick bikes of the 70s ... on the English racers I always had to come off the seat forward, then drop my feet to the ground. Always hated having the front of that seat jammed into my back on hard stops. The banana seat bikes could adjust their seats down in the front to keep you from "snagging" on the front.
